			<content:encoded><![CDATA[<p><span style="font-family: 'Times New Roman', serif;"><span style="font-size: medium;">With over 2,500 brands of Scotch Whiskey being produced by about 125 distilleries, things can get a might confusing when attempting to discuss Scotch Whiskey. And just to complicate matters further, there are 5 single malt regions in Scotland each with their own distinctive taste profiles; Speyside where Macallan is made, Lowlands, Highlands, Islay, Campbeltown, and the Islands. And to cap it off Scotch Whiskey is not just Scotch Whiskey it’s either Scotch Whiskey or Blended Scotch Whiskey or blended grain Scotch whiskey or Blended Malt Scotch Whiskey or finally Single Malt Scotch Whiskey and/or Single grain Scotch Whiskey. And just imagine, all that Scotch is being produced in a country the size of tiny little old South Carolina. I’m willing to bet that the only crop grown in Scotland is barley and 100% of that is used to make Scotch. I’m further willing to bet that every man, woman, and yes, even every child is employed in making Scotch. If there are any animals in Scotland, they must be there because they contribute in some way, shape or form in making Scotch. It just boggles the mind!</span></span></p>
<p><span style="font-family: 'Times New Roman', serif;"><span style="font-size: medium;">Obviously, if Scotch is your preferred tipple, then you might just have a very discerning palate accompanied by the detail oriented brain of a Mensa wizard. Now, it’s been said I have a discriminating palate and at times have been known to possess a sharp tongue, but I will certainly guarantee you I ain’t no Mensa wizard. So if you’re just now preparing to delve into the world of Scotch, I wish you luck and even envy you a bit as you are about to discover some palate pleasing pleasures. On the other hand, if you’re already a serious Scotch drinker ,then you know about and have undoubtedly experienced some out of this world wonders. And so without further ado, I am plunging into the tasting of The Macallan 12 year old single malt Scotch Whiskey.</span></span></p>

<p><span style="font-family: 'Times New Roman', serif;"><span style="font-size: medium;">At this point things become highly subjective or as the French are wont to say; “Chacun a son gout” or each to their own taste. The bottle is a bit oval rather than perfectly round and feels very nice and easy to hold. The label is a no nonsense affair that reflects heritage and dignity. The content is a twelve year old single malt Scotch whiskey matured in selected sherry oak casks from Jerez, Spain. The color is a translucent amber. The nose is a subtle mélange of caramel and butter with a hint of oak and, of course, a delicate nuance of Sherry. Its aromas are softly layered, interwoven, and if it’s at all possible, smell very smooth and laid back. It is light bodied, vaguely viscous and quite the surprise as I was really expecting something with a bit more body. Sherry, oak, and orange initiate the palate followed by smoky peat and dark wood and worn leather. Again it is much gentler than I thought it would be and very refreshing &#8211; yet also very distinct. I do believe the Sherry contributes much to its mellowness, sweetness, smoothness and overall finish. Speaking of which, the finish is medium in length but just long enough to let you enjoy the Sherry and oak and smoke and sweetness one last time and of course it is smooth right up the very end.</span></span></p>
<p><span style="font-family: 'Times New Roman', serif;"><span style="font-size: medium;">This is an excellent Scotch, but unlike a more traditional Scotch, it does not over power and it is not overly smoky or oaky. I do believe if you’re going to just discover the joys of Scotch this would be an excellent place to start. Depending on where you source this elixir it could run as high as $100.00 and as low as $60.00 so do check around, it’ll be worth your time.</span></span></p>

			<content:encoded><![CDATA[<p style="text-align: left;">One of Chef Nate Appleman&#8217;s favorite, yet simple, ways to prepare firm-fleshed fish is to pair it with a mixture of nuts and herbs. Here, a paste of pistachios, preserved Meyer lemon, and parsley complements halibut, while in the next recipe a basil-almond mixture is matched with salmon. If you are fortunate enough to come across halibut cheeks, this dish is especially brilliant with them. If using halibut cheeks, remove the tough connective tissue on the underside before cooking them: slip the tip of a boning knife under the tissues, it will look similar to silver skin – and cut it off the cheek, leaving the cheek intact.</p>

<p>Braised Halibut with Pistachios, preserved Meyer Lemon, and Capers</p>

<p style="margin-bottom: 0in;">Ingredients</p>
<p style="margin-bottom: 0in;">2 ½ lbs halibut fillet, divided into 6 (6 ½ portions), each about 1 inch thick</p>
<p style="margin-bottom: 0in;">Kosher salt</p>
<p style="margin-bottom: 0in;">1 cup unsalted shelled pistachios, lightly toasted (page 81)</p>
<p style="margin-bottom: 0in;">1 TBLS salt packed capers, soaked (p.84) pith and flesh removed, soaked, and minced</p>
<p style="margin-bottom: 0in;">¼ tspn dried chile flakes</p>
<p style="margin-bottom: 0in;">½ cup extra virgin olive oil, plus more for finishing</p>
<p style="margin-bottom: 0in;">Leaves from ½ bunch flat leaf parsley ( about 2 cups loosely packed)</p>
<p style="margin-bottom: 0in;">1 fresh lemon, cut into wedges</p>
<p style="margin-bottom: 0in;">Season the fish portions evenly with a few generous pinches of salt. Cover and refrigerate for at least 1 hour or up to 4 hours.</p>
<p style="margin-bottom: 0in;">About 30 minutes before serving, remove the fish from the refrigerator and bring to room temperature. Preheat the oven to 400 degrees F.</p>
<p style="margin-bottom: 0in;">Combine the pistachios, capers, preserved lemon, and chile flakes in a food processor or a mortar. Pulse a few times or crush with a pestle until coarsely blended.</p>
<p style="margin-bottom: 0in;">With the processor running, drizzle in the olive oil, or drizzle in the olive oil as you can crush the ingredients with the pestle. Add the parsley and pulse a few more times or crush with the pestle just until combined. Taste for seasoning and add a pinch of salt if needed. The fish is seasoned and the preserved lemon and capers are salty, so you may not need to add any salt.</p>
<p style="margin-bottom: 0in;">Place the fish pieces in a baking pan and divide the pistachio mixture evenly among the tops, covering each piece and pressing lightly so the topping adheres. Add enough water to the pan – about ½ cup – to come halfway up the sides of the fish, and transfer the pan to the oven. Braise the fish for 10 – 15 minutes, or until firm and just cooked through.</p>
<p style="margin-bottom: 0in;">Using a slotted spatula, transfer the fish portions to a warmed platter. Taste the braising liquid and drizzle a few spoonfuls over the fish if desired. Finish with a generous drizzle of olive oil. Serve immediately with a side of fresh lemon wedges.</p>

<p><span style="font-size: medium;">We enjoy dining and drinking in downtown Berkeley as we always feel the good vibes and have had many lively discussions with the mix of foodies, students and Cal fans. <strong>Revival Bar &amp; Kitchen</strong> located in an historic 1901 building with its Saloon/Bordello atmosphere is the perfect fit for the neighborhood. <em><strong>Executive Chef/Owner Amy Murray</strong></em> offers a seasonally inspired menu using locally sourced and mostly organic ingredients. They are proud of their close relationships with local producers, farmers, ranchers, coffee roasters and winemakers and <em><strong>Chef de Cuisine / Master Butcher Travis McConnell</strong></em> makes all of their Charcuterie, sausage and bacon in-house. There is a large bar area where Head Mixologist Nat Harry loves to create Modern Interpretations of classic cocktails. You can also have Premium Liquor Flights which is a great way to sample and decide side by side which you like best. We ordered cocktails and enjoyed James Bond’s classic “Shaken not Stirred” Vesper that went down easy and a perfectly refreshing Cosmopolitan.</span></p>

<p><span style="font-size: medium;">Our first course was the Charcuterie Small Plate which included pork rillette, smoked duck breast, speck and a fabulous pork and pistachio pate. Next we loved the Roasted California Squid Flatbread made with anchovy, garlic and oregano pesto, squid ink aioli and pickled peppers. It was tasty but be advised that the squid ink will make you look like you have black lipstick on. Next we had a delicious and unique Sformatino made with spring onion, fennel, green garlic, and house made ricotta with arugula-fava salad and a pink peppercorn Meyer lemon vinaigrette. We highly recommend this dish. We also enjoyed the piping hot Roasted Turnip Soup with green garlic, chive blossom and crème fraiche which was subtle, silky and had excellent flavors. The entrees were both delicious and hearty portions. The McFarland Springs Trout with tarragon cream, grapefruit gastrique, toasted walnuts and braised chard was delicate, sweet and light. The Long &amp; Bailey Farm Grilled Pork Chop with grilled artichokes, salt roasted fingerling potatoes and bourbon butter was extra tender and juicy. The Grilled Asparagus with sauce gribiche was some of the tastiest we’ve ever had and was an excellent side.</span></p>

<p><strong style="font-size: medium;">Revival Bar &amp; Kitchen</strong><span style="font-size: medium;"> has an International Wine List with quite a few wines by the glass. We enjoyed the 2008 Spanish Lila Brut Cava with our starters and the 2010 Sonoma County Three Vineyard Stomping Girl Pinot Noir which paired perfectly with the pork chop.</span></p>

<p><span style="font-size: medium;">We picked two perfect desserts. The Coconut Panna Cotta with Mango, passion fruit coulis, pistachio dust and a citrus tuile had a superior lemon taste. The Backyard Meyer lemon and Chocolate Mousse Cake with cocoa tangerine meringue, cocoa Chantilly, chocolate ganache and cocoa dust was just our style as it was rich yet light. An Old Codger Tawny Port and a Blue Bottle Coffee Espresso was the perfect finish to our excellent dinner. </span><strong style="font-size: medium;">Revival Bar &amp; Kitchen</strong><span style="font-size: medium;"> is a fun, lively and friendly place. It is close to the Berkeley Repertory Theatre and is perfect for pre or post show dinner or drinks. There is Live Music on Thursday nights and Special Events through the year. We look forward to returning soon.</span></p>

This week, we focus on the growth of the program and what it means for consumers when they see the SIP Seal on bottles of wine. Plus, our panel reviews SIP wines from Paso Robles and Santa Barbara County.</span></p>

<p><span style="font-size: medium;"><strong>The SIP program has grown tremendously in just a few years. Are you actively recruiting wineries and growers or do they come to you eager to be part of the program?</strong></span></p>
<p><span style="font-size: medium;">The growth of this program has far exceeded our expectations, and it has been very rewarding to watch the program grow. We are out there giving talks and presentations, but it is a totally voluntary program. Growers don&#8217;t have to do it and many don’t want to do it since it takes plenty of time, energy, and resources to become certified. So it&#8217;s not like we are out there selling the program or trying to coerce people into participating.</span></p>
<p><span style="font-size: medium;">However, people are finding a need for verifiable sustainability claims, and they are coming to us to get involved. Just two years ago, we were at around 14,000 acres in the program, and even that was beyond any of our expectations. So to be at 27,000 statewide acres today is amazing.</span></p>
<p><strong><span style="font-size: medium;">With all the enthusiasm for the program, do you see any limit to how many wineries can be involved given your resources as a non-profit?</span></strong></p>
<p><span style="font-size: medium;">I think there will be a natural slowing of the growth. I don&#8217;t think it&#8217;s for everyone, given what the program requires in terms of the farming level and what it requires beyond that to achieve certification. But I think that&#8217;s good. The intent of the program from the beginning was for it to be a differentiator.</span></p>
<p><span style="font-size: medium;"><strong>So given that differentiation, what are a few of the main reasons you would encourage people to buy SIP Certified wines over bottles without the certification?</strong></span></p>
<p><span style="font-size: medium;">First off, there&#8217;s some great SIP Certified wine available. We&#8217;ve been very pleased with the quality of the wines carrying the SIP Certified Seal [on the label]. So what I like to say is that you can get a great bottle of wine and you can feel really good about how it was produced and how the company is treating its land and its people. To get that SIP Seal, that producer had to go through a lot including a review by an independent body and a site audit. Plus, all the certification standards were peer-reviewed by some very smart people, so you know you can trust the rules and requirements.</span></p>
<p><span style="font-size: medium;">With two bottles of wine of the same quality, from the same AVA [or growing region], odds are that you won&#8217;t have to pay more for the SIP Certified wine compared to [a bottle without it], and when you buy that SIP wine you know the company that made it is taking care of its land and its employees.</span></p>

<p><span style="color: #000000;"><span style="font-family: Times New Roman, serif;"><span style="font-size: medium;">For me, sipping Scotch is like slipping into a time machine, setting the controls back to the 30’s and reliving the golden age of art deco and Bogie and Bacall or more accurately, Bogie and Bergman in Casablanca. Scotch transports me back to what I imagine was a more laid back time, a more elegant time, a time of tagging along with Indiana Jones, a time when every man was a seedy detective and every woman was a slinky dame and everyone smoked unfiltered Lucky Strikes all the time.</span></span></span></p>
<p><span style="color: #000000;"><span style="font-family: Times New Roman, serif;"><span style="font-size: medium;">Back then all of life’s scenes were played out in smoke filled joints just around the corner from the Empire State Building or not far from the jewel like glass crowns and glass wrapped corners of the Chrysler Building. Men always wore suits and ties outside, while inside they donned smoking jackets, and if you were lucky enough to be Hugh Hefner, you wore lounging pajamas. Women wore long flowing dresses and the highest of high heels accented by black stockings with those sexy seams running up the back. They slipped on hats that covered part of their faces obscuring at least one eye and creating an air of intrigue that was accented by netting that made them seem that much more mysterious and inaccessible. Everyone spoke unhurriedly, while spilling double entendres and leaving every sentence open to numerous interpretations as they languorously sipped their Scotches and sexily blew smoke in each other’s faces.</span></span></span></p>
<p><span style="color: #000000;"><span style="font-family: Times New Roman, serif;"><span style="font-size: medium;">Even Fay Wray, at the peak of her panic, in King Kong’s gargantuan gorilla grip atop the Empire State Building, torpidly stretched out her lithe limbs and allowed her flowing pink nightgown to slide sexily around her body while she kicked her high heeled feet. And who can ever forget Ingrid Bergman imploring Sam to “play it again” in Rick’s joint in Casablanca or Bogie’s final line in that movie when he said, “Louis, I think this is the beginning of a beautiful friendship”. </span></span></span></p>
<p><span style="color: #000000;"><span style="font-family: Times New Roman, serif;"><span style="font-size: medium;">That’s where good Scotch takes me, to a mythical and magical time that may have never existed but certainly should have. With every smoky sip, I seem to fly back to that time and end up staring into Lauren Bacall’s or Ingrid Bergman’s eyes while my hand rests languidly upon her thigh. If your Scotch doesn’t have the same effect on you I recommend you switch to this Scotch.</span></span></span></p>
<p><span style="color: #000000;"><span style="font-family: Times New Roman, serif;"><span style="font-size: medium;">In 1886 William Grant took a break from getting his wife pregnant and with his seven sons and two daughters built their distillery by hand and called it Glenfiddich, meaning Valley of the Deer in Gaelic. In December of 1887, they produced their first dram of Scotch Whiskey and since then the family has been producing some pretty decent Scotch. This 12 year old Single Malt Scotch Whiskey is aged in Oloroso Sherry and Bourbon casks.</span></span></span></p>
<p><span style="color: #000000;"><span style="font-family: Times New Roman, serif;"><span style="font-size: medium;">The Nose is certainly smoky and begins my journey back in time with its hints of light citrus and pear and notes of oak and vanilla. It’s just the way I prefer my dames to smell when they walk by me as I lean against the bar and eye them.</span></span></span></p>
<p><span style="color: #000000;"><span style="font-family: Times New Roman, serif;"><span style="font-size: medium;">As it passes my lips it is unmistakably smooth scotch with a smoky mouth and hints of innocent vanilla not unlike a deep kiss from a beautiful 3<sup>rd</sup> cousin.</span></span></span></p>
<p><span style="color: #000000;"><span style="font-family: Times New Roman, serif;"><span style="font-size: medium;">The finish is smooth and saucy warming my throat all the way down to my stomach. For the price this is very, very nice and now hovers around $25.00-30.00/750ml bottle. Amazingly enough, her 15 year old sister is available these days for just a few dollars more and is well worth looking into. I’ll look forward to meeting you at Rick’s Place this weekend for some Scotch.</span></span></span></p>

Since these berries are highly perishable, spoiling within a few hours after harvest, they are most commonly found in powder form here in the U.S. added to protein shakes, ice cream, and supplement powders. <p>Duck Wheat Berry Ragout Ingredients:<br />
2 1/2 c1/4 cup Wheat Berries<br />
3/4 cup Water<br />
1/4 cup Vegetable Oil<br />
6 Duckling Bone-in Leg &amp; Thigh (8 oz. each)<br />
2 cups Red Wine<br />
1/2 cup Onions (chopped)<br />
1/2 cup Celery (chopped)<br />
1/2 cup Carrots (chopped)<br />
4 Garlic Cloves<br />
6 cups Brown Duck Stock<br />
2 Thyme Sprigs<br />
2 Bay Leaves<br />
2 tspn. Black Peppercorns, tomato paste<br />
2 tspn. Tomato Paste<br />
1 tspn. Salt</p>
<p><span style="color: #ff0000;">Method:</span><br />
1. In hot skillet, toast berries until they begin to pop. Place in water: soak in refrigerator overnight.</p>
<p>2. Simmer water and berries for 1 hour or until tender; drain.<br />
Saute duckling legs in 2 Tbsp hot oil until golden brown; remove duckling, Deglaze with wine; reduce by half.</p>
<p>3. Heat remaining oil. Add duckling legs, reduced wine and remaining ingredients; simmer covered for approximately 1-1/2 hours or until tender. Remove duckling from braising liquid; strain. Reserve 3 cups; reduce remaining liquid until thick.</p>
<p>4. Remove meat from bones; mix with reduced liquid and wheat berries, Keep warm.</p>
<p>Roasted Garlic Sauce Ingredients:<br />
12 Garlic Cloves<br />
Olive Oil (as needed)<br />
Reserved Braising Liquid</p>
<p><span style="color: #ff0000;">Method:</span><br />
Cover garlic with oil. On low heat, bring to a simmer and finish cooking in 350°F oven until garlic is golden brown. Reduce braising liquid to 1 cup. Place garlic, 1 tbls. garlic oil and braising liquid in blender; puree until smooth.</p>
<p><span style="color: #ff0000;">Vegetables:</span><br />
Zucchini, Carrots, Turnips (julienne as needed)<br />
Red Swiss Chard Leaves (as needed)</p>
<p><span style="color: #ff0000;">Method: Blanch vegetables</span></p>
<p><span style="color: #ff0000;">Duckling:</span><br />
3 cups Duck Stock<br />
6 Boneless, Skinless Duckling Breasts (8 oz. each)</p>
<p><span style="color: #ff0000;">Method:</span><br />
In simmering stock, poach duckling until desired doneness has been reached; thinly slice.</p>
<p>Garnishes:<br />
Asparagus Spears (cooked)<br />
Potatoes (thinly sliced, fried as needed)</p>
<p><span style="color: #ff0000;">To Serve:</span><br />
Place Swiss chard in center of plate. Top with ragout and surround with julienne vegetables. Spoon sauce on plate and place duckling on sauce. Garnish with asparagus and sliced potatoes.</p>

<p><span style="font-size: medium;"><strong>What are some ways the SIP program has helped to improve production practices for growers?</strong></span></p>
<p><span style="font-size: medium;">One piece of information I&#8217;ve got from people in the program is how valuable it’s been to have to document and track everything, and how the certification forces different parts of their operation to communicate regularly. There may have been a time when the irrigation people weren&#8217;t really talking to the pest control people or weren&#8217;t involved in decisions about equipment. But the process of having to go through all the questions and requirements of the program means different parts of the team are working together much more often. And people have said that&#8217;s been quite valuable since it&#8217;s made everyone more integrated in terms of how they interact with each other and with the property.</span></p>
<p>&nbsp;</p>
<p><span style="font-size: medium;"><strong>Conversely how have the growers helped to improve or maintain the standards of certification?</strong></span></p>
<p><span style="font-size: medium;">We have a regular process where the standards or rules get reviewed every year, and we always ask for feedback from the people who are going through the process. We might find a word here or there that needs changing. Of course, any changes are vetted by technical advisers, but we are always looking for feedback from people that are in the SIP program or people who are observing it. <p><span style="font-size: medium;"><strong>Do you get feedback from vineyards and wineries that they&#8217;ve improved upon their previous practices after going through the certification process compared to when they were operating independently?</strong></span></p>
<p><span style="font-size: medium;">We find that people that want to be certified are already going to be leaning towards a sustainable philosophy. So how much that changes as a result of certification varies. Some people say that they were doing all the stuff before, but they weren&#8217;t keeping records of it. Others say that they had to change a few things in order to comply with some of the rules. Really, it&#8217;s just different case by case.</span></p>
